Chicken Cobbler: A Simple and Delicious Comfort Food

Chicken Cobbler is a cozy and comforting dish, perfect for those who love a combination of tender chicken, rich gravy, and soft, biscuit-like topping. Imagine a warm, golden crust that covers a filling of flavorful chicken, vegetables, and savory gravy. It’s a dish that feels like a hug on a plate—hearty, filling, and satisfying.

What is Chicken Cobbler?

Chicken Cobbler is a twist on the classic fruit cobbler, which is typically made with fruit filling and a biscuit or pastry topping. Instead of fruit, this dish features a savory filling made with chicken, often paired with vegetables like carrots, peas, or onions. The biscuit-like top creates a delicious contrast with the creamy, rich filling underneath. The result is a dish that balances textures and flavors, making it a favorite comfort food for many.

Ingredients

  • 1/2 cup (1 stick) butter

  • 4 cups rotisserie chicken meat, shredded

  • 1 (15 ounce) bag frozen mixed vegetables (such as corn, peas, carrots and beans)

  • 1 (11.36 ounce) package Cheddar bay biscuit mix (such as Red Lobster Cheddar Bay Biscuit Mix®)

  • 2 cups milk

  • 1 (10.5 ounce) can cream of chicken soup

  • 2 cups chicken stock

  • 2 tablespoons fresh chopped parsley (optional)

Directions

  • Gather the ingredients. Preheat the oven to 375 degrees F (190 degrees C). Place the butter in the bottom of a 9×13 baking dish and place it in the oven to melt.
  • When the butter is melted, add chicken in a single layer over the butter. Top evenly with frozen veggies.
  • Stir together the biscuit mix, seasoning packet from the mix, and milk in a bowl until well blended; pour over the chicken and veggies. Spread lightly and evenly over the top of the mixture, but do not stir.
  • Whisk together soup and stock in a second bowl until smooth. Pour over the biscuit mix, but do not stir.
  • Bake in the preheated oven uncovered until very golden brown and only very slightly jiggly in the center, about 45 minutes.
  • Sprinkle parsley over the top if desired and let stand for 10 minutes before serving.

Notes

  • Save time by using leftover cooked chicken or rotisserie chicken. It’s an easy shortcut that also adds extra flavor.
  • For extra fluffiness, swap regular milk for buttermilk in the biscuit topping. It adds a slight tang and gives a softer, more tender texture.
