  • 2 cups whole milk (or water for a lighter version)

  • 4 ounces dark chocolate (60-70% cocoa), chopped

  • 1 tablespoon sugar (optional)

  • ½ teaspoon ground cinnamon (optional)

  • ½ teaspoon vanilla extract (optional)

  • 2 ounces fresh cheese (queso campesino, mozzarella, or mild white cheese), cubed

Directions

  • Heat the milk: In a saucepan, heat the milk over medium heat until warm but not boiling.
  • Melt the chocolate: Add the chopped chocolate and stir continuously until completely melted and smooth.
  • Add flavorings: Stir in sugar, cinnamon, and vanilla extract if using.
  • Froth the chocolate: Use a wooden molinillo (traditional frothing stick) or whisk vigorously until frothy.
  • Serve with cheese: Pour the hot chocolate into mugs, add the cheese cubes, and let them soften for a minute before enjoying.

Notes

  • The chocolate can also be made using a traditional chocolatera (a special pot for hot chocolate).
