8 small flour or corn tortillas
1 lb ground beef or chicken
1 packet taco seasoning
½ cup water
1 cup shredded cheese (cheddar, Mexican blend)
½ cup diced tomatoes or salsa
½ cup canned black beans (optional)
Oil spray or a bit of olive oil
Directions
- Preheat oven to 400°F (200°C).
- Cook meat in a skillet until browned. Drain excess fat.
- Add taco seasoning and water. Simmer until thickened.
- Lightly oil a sheet pan. Place tortillas down, overlapping slightly.
- Spoon meat mixture evenly over tortillas. Add beans if using.
- Sprinkle cheese and tomatoes or salsa over the top.
