Ingredients

  • 4 oz cream cheese, softened

  • 2 tbsp unsalted butter, softened

  • 1 cup powdered sugar

  • ½ tsp vanilla extract

Directions

  • Preheat oven to 350°F (175°C). Grease or line an 8×8-inch baking pan with parchment paper.
  • In a medium bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  • In a large bowl, beat eggs, oil, brown sugar, granulated sugar, and vanilla until smooth.
  • Stir in the dry ingredients until just combined.
  • Fold in shredded carrots and optional nuts, pineapple, or raisins.
  • Pour batter into prepared pan and spread evenly.
  • Bake for 22–25 minutes, or until a toothpick comes out clean. Let cool completely.
  • Meanwhile, beat cream cheese and butter until smooth. Add powdered sugar and vanilla; beat until creamy.
  • Spread frosting over cooled bars. Slice and serve.
