Ingredients

  • 1 lb (450g) carrots, peeled and sliced on a bias (or use baby carrots)

  • 2 tbsp unsalted butter

  • 2 tbsp honey

  • 2 tbsp fresh orange juice

  • 1 tsp orange zest

  • ½ tsp salt

  • ¼ tsp black pepper

  • Fresh parsley or thyme, for garnish (optional)

Directions

  • Bring a pot of salted water to a boil. Add carrots and cook for 6–8 minutes, until just tender. Drain and set aside.
  • In a large skillet over medium heat, melt the butter. Stir in honey, orange juice, zest, salt, and pepper.
  • Add the carrots and toss to coat. Cook for 3–5 minutes, stirring occasionally, until the glaze thickens and carrots are shiny.
  • Transfer to a serving dish and garnish with herbs if desired.

Notes

  • Use rainbow carrots for a colorful, festive presentation.
  • Can be made ahead and gently reheated before serving.
