Ingredients

  • 1 bone-in or boneless ham (about 5–6 lbs)

  • 2 tbsp olive oil

  • 2 tbsp brown sugar

  • 1 tbsp smoked paprika

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1 tsp ground mustard

  • 1 tsp ground black pepper

  • ½ tsp salt

  • 1 cup barbecue sauce

  • ¼ cup apple cider vinegar

  • 2 tbsp honey

  • 1 tbsp Dijon mustard

Directions

  • Preheat oven to 300°F (150°C). Line a roasting pan with aluminum foil.
  • In a small bowl, mix together olive oil, brown sugar, paprika, garlic powder, onion powder, mustard, pepper, and salt. Rub the mixture all over the ham.
  • Place the ham in the prepared roasting pan and cover loosely with foil.
  • Bake for 3–4 hours, basting every 45 minutes with its own juices.
  • Once the ham reaches an internal temperature of 190°F (88°C) and is fork-tender, remove from the oven and let it rest for 15 minutes.
  • While the ham rests, prepare the sauce by mixing barbecue sauce, apple cider vinegar, honey, and Dijon mustard in a saucepan. Bring to a simmer and cook for 5–10 minutes, stirring occasionally.
  • Shred the ham using two forks, pulling it apart into bite-sized pieces.
  • Drizzle the sauce over the shredded ham, and toss to coat.
  • Serve on buns, in tacos, or with your favorite sides.

Notes

  • If you prefer a sweeter sauce, add more honey or brown sugar to taste.
  • This pulled ham also works great for meal prep and can be stored in the fridge for up to 5 days.
  • For a smoky flavor, add a few drops of liquid smoke to the sauce.
