  • 2 cups cold mashed potatoes

  • 1 cup shredded cheddar cheese

  • 2 large eggs

  • ¼ cup sour cream or plain Greek yogurt

  • ¼ cup chopped green onions or chives

  • Salt and pepper, to taste

  • Cooking spray or butter, for greasing muffin tin

Directions

  • Preheat oven to 400°F (200°C). Lightly grease a mini muffin tin with butter or cooking spray.
  • In a large bowl, combine mashed potatoes, cheese, eggs, sour cream, and green onions. Mix until smooth and well combined.
  • Season with salt and pepper to taste.
  • Spoon the mixture into the muffin cups, filling each about ¾ full.
  • Bake for 20–25 minutes, or until puffed and golden brown.
  • Let cool for 5 minutes before removing from the pan. Serve warm.
