Ingredients

  • 1 sheet puff pastry (thawed)

  • 1 cup ricotta cheese

  • 1/2 cup grated Parmesan cheese

  • 1 egg, beaten (plus extra for egg wash)

  • Zest of 1 lemon

  • 1 bunch asparagus, trimmed

  • 1 tbsp olive oil

  • Salt and pepper, to taste

  • Fresh thyme or basil for garnish

Directions

  • Preheat oven to 400°F (200°C).
  • Roll out puff pastry on a baking sheet lined with parchment paper. Score a 1-inch border around the edge without cutting all the way through.
  • In a bowl, mix ricotta, Parmesan, beaten egg, lemon zest, salt, and pepper until smooth. Spread this mixture evenly inside the border.
  • Toss asparagus with olive oil, salt, and pepper. Arrange asparagus spears neatly over the ricotta mixture.
  • Brush the pastry border with beaten egg.
  • Bake for 20–25 minutes until pastry is golden and asparagus is tender.
  • Garnish with fresh thyme or basil before serving.

Notes

  • For added flavor, sprinkle red pepper flakes or garlic powder in the ricotta mixture.
  • Substitute ricotta with goat cheese or cream cheese if preferred.
