2 cloves garlic, minced

2 tbsp curry powder (mild or hot)
1 tsp ground cumin
½ tsp turmeric

1 tbsp tomato paste
1 cup coconut milk or heavy cream
½ cup vegetable or chicken broth

Directions
- Heat oil in a saucepan over medium heat. Add onion and sauté until soft and golden, about 5 minutes.
- Stir in garlic and ginger; cook for 1 minute until fragrant.
- Add curry powder, cumin, turmeric, and chili powder. Stir for 30 seconds to toast the spices.
- Mix in tomato paste and cook for another minute.
- Pour in coconut milk and broth. Stir well and bring to a gentle simmer.
- Simmer for 10–15 minutes until slightly thickened. Season with salt to taste.
- Blend with an immersion blender for a smoother texture, if desired.
