6 flour tortillas (small)
6 eggs
1 cup milk
1 cup cooked breakfast sausage or bacon
1 cup shredded cheddar or Mexican blend cheese
1 cup enchilada sauce (red or green)
½ cup diced bell peppers or onions (optional)
Salt, pepper, and spices to taste
Chopped cilantro or green onions for garnish
Directions
- Preheat oven to 175°C (350°F) and grease a 9×13-inch baking dish.
- In a bowl, whisk eggs, milk, salt, pepper, and spices.
- Layer half the tortillas on the bottom of the dish.
- Top with half the sausage, cheese, veggies, and enchilada sauce.
- Repeat the layers, then pour the egg mixture evenly over the top.
