Ingredients

  • 2–3 large zucchinis

  • 2 tbsp olive oil

  • 2 tbsp melted butter

  • 3 garlic cloves, minced

  • ½ tsp salt

  • ¼ tsp black pepper

  • 1 tsp Italian seasoning

  • 1 cup shredded mozzarella cheese

  • ¼ cup grated Parmesan cheese

  • Fresh parsley, chopped (for garnish)

Directions

  • Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • Slice zucchinis lengthwise into thick “steaks” (about ½–¾ inch thick).
  • In a small bowl, mix olive oil, melted butter, garlic, salt, pepper, and Italian seasoning.
  • Brush the zucchini steaks on both sides with the garlic mixture and place them on the baking sheet.
  • Roast for 15 minutes, then remove from the oven.
  • Sprinkle mozzarella and Parmesan evenly over the zucchini.
  • Return to the oven and bake for another 5–7 minutes, or until the cheese is bubbly and golden.
  • Garnish with chopped parsley and serve hot.
