12 oz (340g) kielbasa, sliced into rounds
8 oz (225g) pasta (penne or rotini work great)
1 tbsp olive oil or butter
1 small onion, diced
2 garlic cloves, minced
2 cups shredded cheddar cheese
1 cup milk or half-and-half
½ cup chicken broth
1 tbsp flour (optional, for thickening)
Salt and pepper, to taste
Optional: chopped parsley for garnish
Directions
- Cook pasta according to package instructions. Drain and set aside.
- In a large skillet, heat oil or butter over medium heat. Add kielbasa slices and cook until browned, about 5 minutes. Remove and set aside.
- In the same skillet, sauté onion until soft, then add garlic and cook for 1 minute.
- Sprinkle in flour (if using), stir for 1–2 minutes. Add milk and broth, whisking to smooth out any lumps.
- Bring to a simmer, then stir in cheese until melted and smooth.
- Add cooked pasta and kielbasa back to the pan. Toss to coat evenly.
- Season with salt and pepper, and garnish with parsley if desired
