Ingredients

  • 12 oz (340g) kielbasa, sliced into rounds

  • 8 oz (225g) pasta (penne or rotini work great)

  • 1 tbsp olive oil or butter

  • 1 small onion, diced

  • 2 garlic cloves, minced

  • 2 cups shredded cheddar cheese

  • 1 cup milk or half-and-half

  • ½ cup chicken broth

  • 1 tbsp flour (optional, for thickening)

  • Salt and pepper, to taste

  • Optional: chopped parsley for garnish

Directions

  • Cook pasta according to package instructions. Drain and set aside.
  • In a large skillet, heat oil or butter over medium heat. Add kielbasa slices and cook until browned, about 5 minutes. Remove and set aside.
  • In the same skillet, sauté onion until soft, then add garlic and cook for 1 minute.
  • Sprinkle in flour (if using), stir for 1–2 minutes. Add milk and broth, whisking to smooth out any lumps.
  • Bring to a simmer, then stir in cheese until melted and smooth.
  • Add cooked pasta and kielbasa back to the pan. Toss to coat evenly.
  • Season with salt and pepper, and garnish with parsley if desired

Notes

  • Add a handful of spinach or peas for extra veggies.
  • Use smoked gouda or pepper jack for a flavor twist.
  • Great for leftovers — just reheat with a splash of milk to loosen the sauce.
