2 cups all-purpose flour
1/2 teaspoon salt
3/4 cup hot water
1/4 cup sesame oil (or vegetable oil)
1 cup finely chopped scallions
Extra flour (for dusting)
Directions
- Prepare the Dough
In a bowl, mix the flour and salt.
Gradually add hot water while stirring until a dough forms.
Knead the dough for 5-7 minutes until smooth, then cover and let it rest for 30 minutes - Roll and Layer
Divide the dough into 4 equal portions.
Roll each portion into a thin circle, brush with sesame oil, and sprinkle with scallions.
Roll the dough into a log, then coil it into a spiral shape and flatten it gently.
Roll it out again into a thin pancake. - Cook the Pancakes
Heat a pan over medium heat and add a thin layer of oil.
Cook each pancake for 2-3 minutes per side until golden brown and crispy.
Drain on paper towels and cut into wedges.
