  • ½ cup soy sauce

  • 1 tablespoon seasoned rice vinegar

  • 1 tablespoon finely chopped Chinese chives

  • 1 tablespoon sesame seeds

  • 1 teaspoon chile-garlic sauce (e.g., Sriracha)

Directions

  • In a small bowl, combine the soy sauce, rice vinegar, chives, sesame seeds, and chile-garlic sauce.
  • Set the dipping sauce aside.
  • In a large bowl, mix together the ground pork, garlic, egg, chives, soy sauce, sesame oil, and ginger until fully combined.
  • On a lightly floured work surface, place a dumpling wrapper and spoon about 1 tablespoon of the pork mixture in the center.
  • Wet the edge of the wrapper with a little water, then fold and crimp the edges to seal, forming pleats along the way. Repeat with the remaining wrappers and filling.
