250 g (9 oz) pasta (penne, rigatoni, or fusilli work best)
250 g (9 oz) Italian sausage (casings removed)
1 tbsp olive oil
2 cloves garlic, minced
1 small onion, chopped
½ cup chicken broth
1 cup heavy cream
½ cup grated Parmesan cheese
1 tsp chili flakes (optional)
Salt and pepper, to taste
Fresh parsley, chopped (for garnish)
Directions
- Cook pasta in salted boiling water until al dente. Reserve ½ cup pasta water, then drain.
- Heat olive oil in a large skillet over medium heat. Add sausage, breaking it up with a spoon. Cook until browned.
- Add onion and garlic; sauté until softened and fragrant.
- Pour in chicken broth and simmer for 2–3 minutes to deglaze the pan.
- Reduce heat and stir in cream and Parmesan. Simmer until the sauce thickens slightly.
- Add cooked pasta and toss to coat. If the sauce is too thick, add a splash of reserved pasta water.
- Season with salt, pepper, and chili flakes to taste.
- Garnish with chopped parsley and extra Parmesan if desired. Serve hot!
