Juicy, sweet, and fragrant — these Italian Macerated Strawberries are a timeless and elegant dessert made with just a few ingredients. The berries soften and release their juices in sugar and balsamic vinegar, creating a naturally luscious syrup.

Origin Italian Macerated Strawberries

Macerated strawberries are popular across Europe, but in Italy, they’re often enhanced with aceto balsamico (balsamic vinegar) to add depth and complexity. It’s a classic that’s simple yet sophisticated.

What I Love About This Recipe

It’s incredibly easy, and the result is pure magic — soft, syrupy berries bursting with flavor. Serve them over gelato, panna cotta, cake, or even enjoy them on their own with a spoon.

Ingredients

  • 1 lb (450g) fresh strawberries, hulled and halved or sliced

  • 2–3 tbsp granulated sugar (adjust based on sweetness of berries)

  • 1–2 tsp good-quality balsamic vinegar

  • Optional: a few fresh basil or mint leaves, torn

  • Optional: fresh ground black pepper (for a gourmet touch)

Directions

  • Place sliced strawberries in a mixing bowl.
  • Sprinkle with sugar and drizzle with balsamic vinegar.
  • Toss gently to coat all the berries evenly.
  • Let sit for 30 minutes to 2 hours at room temperature (or chill in the fridge) to macerate.
  • Add herbs or a pinch of black pepper if desired, and toss again before serving.
  • Serve over gelato, pound cake, ricotta toast, yogurt, or enjoy as-is.

Notes

  • Use ripe, in-season strawberries for the best flavor.
  • Aged balsamic vinegar adds beautiful depth — don’t use low-quality vinegar.
  • Can be made ahead and stored in the fridge for up to 2 days.
