4 cod fillets (about 6 oz each)
1 cup cherry tomatoes, halved
½ cup Kalamata olives, pitted and halved
¼ cup red onion, thinly sliced
3 garlic cloves, minced
2 tbsp olive oil
1 tbsp lemon juice
1 tsp dried oregano
Salt and black pepper, to taste
Fresh parsley, chopped (for garnish)
Lemon wedges, for serving
Directions
- Preheat oven to 400°F (200°C). Lightly grease a baking dish.
- Place cod fillets in the dish and season with salt, pepper, and lemon juice.
- In a bowl, combine tomatoes, olives, onion, garlic, olive oil, and oregano. Toss well.
- Spoon the tomato mixture evenly over and around the fish.
- Bake for 15–18 minutes, or until the cod flakes easily with a fork.
- Garnish with fresh parsley and serve with lemon wedges.
