Ingredients

  • 4 cod fillets (about 6 oz each)

  • 2 lemons (1 juiced, 1 sliced)

  • 1 cup cherry tomatoes, halved

  • ½ cup Kalamata olives, pitted and halved

  • 2 tbsp olive oil

  • 2 garlic cloves, minced

  • 1 tsp dried oregano or Italian seasoning

  • Salt and black pepper, to taste

  • Fresh parsley, for garnish

Directions

  • Preheat oven to 400°F (200°C). Lightly grease a baking dish.
  • Place cod fillets in the dish. Drizzle with lemon juice and season with salt, pepper, and oregano.
  • Scatter cherry tomatoes, olives, and garlic around the fish. Lay lemon slices on top of each fillet.
  • Drizzle olive oil over everything.
  • Bake for 15–18 minutes, or until the cod flakes easily with a fork.
  • Garnish with fresh parsley and serve warm.
