2 salmon fillets
1 cup cherry tomatoes, halved
½ cup kalamata olives, pitted and sliced
¼ red onion, thinly sliced
2 tablespoons olive oil
2 cloves garlic, minced
1 teaspoon dried oregano
Juice of ½ lemon
Salt and pepper to taste
Fresh parsley or basil for garnish
Directions
- Preheat your oven to 400°F (200°C).
- Cut two large sheets of aluminum foil.
- Place a salmon fillet on each sheet, skin-side down.
- Top with cherry tomatoes, olives, red onion, and garlic.
- Drizzle olive oil and lemon juice evenly over both fillets.
- Sprinkle with oregano, salt, and pepper.
- Fold and seal the foil packets, leaving some space for steam to circulate.
- Place on a baking sheet and bake for 15–18 minutes, or until salmon flakes easily with a fork.
