Ingredients

  • 2 large eggs

  • Salt and pepper, to taste

  • 1 small flour tortilla (6–8 inches)

  • ¼ cup shredded cheddar or Monterey Jack cheese

  • 2 tbsp salsa or diced tomatoes

  • 2 tbsp cooked bacon, sausage, or veggies (optional)

  • 1 tbsp butter or oil

  • Sour cream or avocado slices (optional)

Directions

  • Heat butter or oil in a small pan over medium heat.
  • Beat eggs with salt and pepper, then pour into the pan. Scramble until just set.
  • Warm the tortilla briefly in a microwave or pan.
  • Place scrambled eggs in the center of the tortilla. Top with cheese, salsa, and optional fillings.
