1 loaf crusty bread (sourdough or country), cubed and dried (about 10 cups)
1 cup unsalted butter
1 large onion, diced
3 celery stalks, chopped
3 garlic cloves, minced
2½ cups low-sodium chicken or vegetable broth
2 large eggs, lightly beaten
2 tbsp fresh parsley, chopped
1 tbsp fresh sage, chopped (or 1 tsp dried)
1 tbsp fresh thyme, chopped (or 1 tsp dried)
Salt and black pepper, to taste
Directions
- Preheat oven to 350°F (175°C). Lightly grease a large baking dish.
- In a large skillet, melt butter over medium heat. Add onion and celery, and cook until softened (about 8–10 minutes). Stir in garlic and herbs; cook 1 minute more.
- In a large mixing bowl, combine bread cubes, sautéed mixture, broth, eggs, salt, and pepper. Stir gently until everything is moistened but not soggy.
- Transfer to the prepared baking dish and cover with foil.
- Bake for 30 minutes, then uncover and bake an additional 20–25 minutes until golden and crisp on top.
- Let rest 5–10 minutes before serving.
