These are the Italian-style, red sauce meatballs of our dreams, thanks to grated provolone and Parmesan and a 50/50 mixture of beef and sausage. Cinnamon and orange zest simmered with the tomato sauce add a surprising layer of flavor to the dish.

Ingredients

  • 2 large eggs

  • 2 tsp. balsamic vinegar

  • Kosher salt and pepper

  • 1/3 c. panko

  • 4 large cloves garlic, grated

  • 1/2 c. flat-leaf parsley, chopped

  • 2 oz. provolone, finely grated (about 1/2 c.)

  • 1/4 c. grated Parmesan

  • 1/2 tsp. dried oregano

  • 1/2 lb. ground beef (85% lean)

  • 1/2 lb. Italian sausage, casings removed

  • 1 c. tomato sauce

  • 1 strip orange zest

  • 1 small cinnamon stick

Directions

  • Heat broiler. Line a rimmed baking sheet with nonstick foil.
  • In large bowl, whisk together eggs, vinegar, 3/4 teaspoon salt, and 1/2 teaspoon pepper. Stir in panko and let sit 1 minute. Stir in garlic, then parsley, cheeses, and oregano. Add beef and sausage and gently mix to combine.
  • Shape the meat mixture into 20 balls (each about 1 1/2 inches) and place on the prepared sheet. Broil until cooked through, 6 to 8 minutes.
  • Meanwhile, in a small saucepan, combine tomato sauce, orange zest, and cinnamon stick; simmer for 5 minutes. Toss the meatballs in the sauce and serve.

Notes

  • Air fryer directions: Heat air fryer to 400°F. Arrange meatballs in single layer in air fryer basket (meatballs can touch, but do not stack; cook in batches if necessary) and air-fry until cooked through, 8 minutes.
