Ingredients

  • ¼ cup soy sauce

  • 2 tbsp honey

  • 2 tbsp ketchup

  • 1 tbsp rice vinegar or lime juice

  • 2 garlic cloves, minced

  • 1 tsp grated ginger

Directions

  • Preheat oven to 400°F (200°C). Line a sheet pan with parchment.
  • Whisk together all glaze ingredients in a bowl.
  • Toss chicken, pineapple, and veggies with olive oil, salt, pepper, and half the glaze.
  • Spread evenly on the sheet pan.
  • Bake for 20–25 minutes, stirring once halfway through.
  • Brush with remaining glaze and broil for 2–3 minutes for a caramelized finish.
  • Serve hot over rice or noodles.

Notes

  • Use canned pineapple in juice (not syrup) if fresh isn’t available.
