Ingredients

  • 1 tablespoon oil or butter

  • 1 teaspoon chopped garlic

  • 1/2 inch ginger, finely chopped

  • 1/2 onion, chopped

  • 1/2 cup carrots, finely chopped

  • 1/2 cup beans, chopped

  • 1/4 cup corn kernels

  • 1/2 cup cabbage, shredded

  • 3 cups water or vegetable stock

  • Salt and pepper to taste

  • 1 teaspoon soy sauce (optional)

  • 1 teaspoon cornflour mixed with 2 tablespoons water (for thickening, optional)

  • Chopped spring onion or coriander for garnish

Directions

  • Heat oil or butter in a pan. Add garlic and ginger, sauté for a few seconds.
  • Add onion and cook until slightly translucent.
  • Stir in carrots, beans, corn, and cabbage. Sauté for 2–3 minutes.
  • Add water or stock. Bring to a boil.
  • Season with salt, pepper, and optional soy sauce.
  • For a thicker soup, add the cornflour slurry and stir continuously until it thickens slightly.
  • Simmer for 5–7 minutes or until vegetables are tender.
  • Garnish with spring onion greens or coriander and serve hot.

Notes
