¾ cup molasses
1 egg
1 stick (½ cup) unsalted butter, softened
1 tsp baking soda

Directions
- In a large bowl, cream together butter and brown sugar until light and fluffy. Add the egg and molasses, mixing well.
- In a separate bowl, whisk together flour, baking soda, ginger, cinnamon, cloves, and salt.
- Gradually mix the dry ingredients into the wet mixture until a dough forms.
- Divide dough in half, wrap in plastic, and chill for at least 1 hour.
- Preheat oven to 350°F (175°C). Roll out dough on a floured surface to ¼-inch thickness.
- Cut out gingerbread people using a cookie cutter and place them on a lined baking sheet.
- Bake for 8–10 minutes or until edges are firm. Let cookies cool completely on a wire rack.
