Ingredients

  • 6 thick beef or pork sausages

  • 2 large onions, thinly sliced

  • 2 cloves garlic, minced

  • 2 tablespoons butter

  • 2 tablespoons plain flour

  • 1½ cups beef stock

  • 1 tablespoon Worcestershire sauce

  • ½ teaspoon thyme (optional)

  • Salt and black pepper, to taste

  • Fresh parsley, for garnish (optional)

Directions

  • In a pan, melt butter over medium heat. Add sliced onions and cook until golden and soft (about 10–15 mins).
  • Stir in garlic and cook for 1 minute. Sprinkle in flour and stir for another minute.
  • Gradually add beef stock and Worcestershire sauce, stirring to form a smooth gravy.
  • Place sausages in the slow cooker. Pour onion gravy over the top.
  • Cover and cook on low for 6–7 hours or high for 3–4 hours, until sausages are cooked through and gravy is rich.
  • Season with salt and pepper. Serve hot with mashed potatoes or rice.

Notes


  • For extra flavor, brown the sausages before placing them in the slow cooker.
  • You can use chicken sausages or veggie sausages for a lighter or vegetarian version.
