Ingredients

  • 1 (10 oz) package frozen chopped spinach, thawed and well-drained

  • 1 cup seasoned breadcrumbs

  • ½ cup grated Parmesan cheese

  • 1 cup shredded cheddar cheese

  • 3 eggs, lightly beaten

  • 2 tbsp butter, melted

  • 1 tsp garlic powder

  • Salt and pepper, to taste

Directions

  • Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  • In a large bowl, mix all ingredients until fully combined.
  • Roll mixture into 1-inch balls and place on the prepared baking sheet.
  • Bake for 18–20 minutes, or until golden brown and firm to the touch.
  • Let cool slightly before serving. Serve warm or at room temperature.

Notes

  • Make sure spinach is well-drained to prevent soggy balls.
  • These can be frozen before or after baking — just reheat in the oven when ready.
  • Add a dash of hot sauce or red pepper flakes for a spicy twist.
