Ingredients

  • 6 flour tortillas (small)

  • 6 eggs

  • 1 cup milk

  • 1 cup cooked breakfast sausage or bacon

  • 1 cup shredded cheddar or Mexican blend cheese

  • 1 cup enchilada sauce (red or green)

  • ½ cup diced bell peppers or onions (optional)

  • Salt, pepper, and spices to taste

  • Chopped cilantro or green onions for garnish

Directions

  • Preheat oven to 175°C (350°F) and grease a 9×13-inch baking dish.
  • In a bowl, whisk eggs, milk, salt, pepper, and spices.
  • Layer half the tortillas on the bottom of the dish.
  • Top with half the sausage, cheese, veggies, and enchilada sauce.
  • Repeat the layers, then pour the egg mixture evenly over the top.
  • Cover with foil and bake for 30–35 minutes.
  • Uncover and bake an additional 10–15 minutes until golden and set.
  • Let cool slightly before slicing and garnishing.
