No-Bake Cheesecake Flag Cake is a festive and creamy dessert made with a graham cracker crust, a smooth no-bake cheesecake filling, and fresh berries arranged to resemble the American flag. The cake is chilled until set, making it perfect for summer celebrations like the Fourth of July. Strawberries and blueberries not only create a patriotic look but also add a fresh, fruity contrast to the rich filling. It’s an effortless showstopper that requires no oven time and delivers on both taste and appearance.

Ingredients

  • 1½ cups fresh blueberries

  • 1½ cups fresh strawberries, halved or sliced

  • 3 (8 oz) packages cream cheese, softened

  • 1 cup powdered sugar

  • 2 tsp vanilla extract

  • 1 cup heavy cream, cold

  • 2 cups graham cracker crumbs (about 15 full sheets)

  • ½ cup unsalted butter, melted

  • ¼ cup granulated sugar

Directions

  • In a bowl, combine graham cracker crumbs, sugar, and melted butter. Stir until evenly moistened.
  • Press firmly into the bottom of a 9×13-inch baking dish. Chill in the refrigerator while you prepare the filling.
  • In a large bowl, beat softened cream cheese and powdered sugar until smooth and creamy.
  • Add vanilla extract and beat to combine.
  • In a separate bowl, whip the cold heavy cream to stiff peaks.
  • Gently fold the whipped cream into the cream cheese mixture until fully incorporated.
  • Spread filling evenly over the chilled crust. Smooth the top with a spatula.
  • Cover and refrigerate for at least 4 hours, preferably overnight, until set.
  • Arrange blueberries in the top left corner to form the “stars” square.
  • Arrange strawberries in rows to create the stripes pattern.
  • Keep chilled until ready to serve.

Notes

  • You can substitute raspberries for strawberries if you prefer.
  • For cleaner slices, freeze the cake for 30 minutes before cutting.
  • If you don’t have a 9×13 dish, this also works in a large sheet pan or trifle dish.
