Ingredients

  • 3 cups mashed potatoes (preferably chilled)

  • 1 cup shredded cheddar cheese (or your favorite melting cheese)

  • 2 green onions, finely chopped

  • 1 tsp garlic powder

  • Salt and pepper to taste

  • 2 eggs, beaten

  • 1 cup breadcrumbs (panko or regular)

  • Oil for frying or cooking spray for baking

Directions

  • In a large bowl, mix mashed potatoes, cheese, green onions, garlic powder, salt, and pepper until well combined.
  • Shape the mixture into small balls or oval puffs.
  • Dip each puff into beaten egg, then roll in breadcrumbs until fully coated.
  • To fry: Heat oil in a deep pan over medium heat. Fry puffs in batches until golden brown and crispy, about 3–4 minutes. Drain on paper towels.
  • To bake: Preheat oven to 400°F (200°C). Place puffs on a baking sheet lined with parchment paper. Spray lightly with cooking spray. Bake for 20–25 minutes, turning halfway, until golden and crispy.
  • Serve warm with ketchup, ranch, or your favorite dipping sauce.
