4 cups russet potatoes, peeled and cubed
2 cups cooked chicken, diced (rotisserie chicken works great)
6 slices bacon, cooked and crumbled
1 cup shredded cheddar cheese
½ cup sour cream
½ cup ranch dressing
2 tbsp olive oil
1 tsp garlic powder
Salt and pepper, to taste
2 tbsp chopped green onions (optional, for garnish)
Directions
- Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish with olive oil or non-stick spray.
- Boil the cubed potatoes in salted water until fork-tender (10–12 minutes), then drain and set aside.
- In a large bowl, combine the cooked potatoes, diced chicken, crumbled bacon, garlic powder, and salt and pepper.
- Stir in sour cream, ranch dressing, and half of the shredded cheddar cheese. Mix until well combined.
- Pour the mixture into the prepared baking dish and top with the remaining cheddar cheese.
