1 ½ cups graham cracker crumbs
¼ cup granulated sugar
6 tbsp melted butter
16 oz (2 blocks) cream cheese, softened
½ cup granulated sugar
2 large eggs
1 tsp vanilla extract
¼ cup sour cream
Directions
- Preheat oven to 325°F (160°C). Line an 8×8 or 9×9-inch baking pan with parchment paper.
- In a bowl, combine graham cracker crumbs, sugar, and melted butter. Press mixture firmly into the bottom of the prepared pan to form the crust.
- In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, then mix in vanilla and sour cream.
- Pour the cheesecake mixture over the crust and smooth the top.
- Bake for 30–35 minutes, or until the center is just set.
- Allow to cool completely, then chill in the refrigerator for at least 2 hours (preferably overnight).
- Before serving, top with holiday sprinkles, crushed candy canes, or a drizzle of white chocolate. Cut into bars and enjoy!

- You can switch the crust with crushed gingersnaps for extra holiday flavor.
