  • 2 cups cooked rice (white or brown)

  • 1½ cups Alfredo sauce (store-bought or homemade)

  • 1 cup shredded mozzarella cheese

  • ½ cup grated Parmesan cheese

  • 1 cup frozen peas or broccoli florets (optional)

  • Salt and pepper, to taste

  • Optional: chopped parsley for garnish

Directions

  • Preheat oven to 375°F (190°C).
  • In a large mixing bowl, combine chicken, rice, Alfredo sauce, ½ cup mozzarella, Parmesan, and veggies (if using). Season with salt and pepper.
  • Transfer mixture to a greased 9×9-inch baking dish.
  • Top with remaining mozzarella cheese.
  • Bake for 20–25 minutes, or until bubbly and golden on top.
  • Let cool for 5 minutes, then garnish with parsley and serve warm.

Notes

  • Rotisserie chicken works great for this recipe.

  • ½ cup sour cream

  • 1 tbsp mayonnaise

  • 1½ cups cooked crab meat (real or imitation), flaked

  • 2 green onions, sliced

  • 1 clove garlic, minced

  • 1 tbsp soy sauce

  • 1 tsp Worcestershire sauce

  • 1 tsp sugar

  • ½ tsp black pepper

  • 1 cup shredded mozzarella cheese (plus extra for topping)

  • 2 cups crushed wonton chips or tortilla chips (for topping)

Directions

  • Preheat oven to 375°F (190°C). Lightly grease a baking dish.
  • In a large bowl, mix cream cheese, sour cream, and mayo until smooth.
