  • 1 cup cucumber, diced

  • ½ cup red bell pepper, diced

  • ¼ cup red onion, finely chopped

  • ½ cup black olives, sliced

  • 1 cup mozzarella balls or cubes (optional)

  • ¼ cup fresh basil, chopped

Directions

  • Cook pasta according to package instructions until al dente. Drain and rinse under cold water. Set aside.
  • In a small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, minced garlic, honey, salt, and pepper.
  • In a large bowl, combine pasta, cherry tomatoes, cucumber, bell pepper, red onion, olives, mozzarella, and basil.
