Directions

  • Preheat oven to 375°F (190°C). Cook pasta in salted boiling water until al dente. Drain and set aside.

  • 4 bone-in, skin-on chicken thighs

  • Salt and pepper, to taste

  • 2 tbsp olive oil

  • 1 small onion, finely chopped

  • 2 cloves garlic, minced

  • 1 cup orzo pasta

  • 2 cups chicken broth

  • 1 lemon (zested and juiced)

  • 1 tsp dried oregano or 1 tbsp fresh oregano, chopped

  • Fresh parsley, chopped (for garnish)

Directions

  • Season chicken thighs with salt and pepper. Heat olive oil in a large skillet over medium-high heat.
  • Add chicken, skin side down, and sear until golden and crispy, about 5–7 minutes. Flip and cook 3 minutes on the other side. Remove chicken and set aside.
  • In the same skillet, add onion and garlic; sauté until softened and fragrant.
