Ingredients

  • 1 lb (450g) salmon fillets, skin removed

  • 1 tbsp olive oil

  • 1 tsp paprika

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • ½ tsp dried oregano

  • ½ tsp cayenne pepper (adjust to taste)

  • ½ tsp salt

  • ¼ tsp black pepper

  • 1 ripe mango, diced

  • 1 ripe avocado, diced

  • ½ small red onion, finely chopped

  • 1 jalapeño, minced (optional, for heat)

  • Juice of 1 lime

  • 2 tbsp chopped fresh cilantro

  • Salt, to taste

  • 6 small corn or flour tortillas

  • Optional toppings: shredded cabbage, sour cream, lime wedges, hot sauce

Directions

  • Combine mango, avocado, red onion, jalapeño, lime juice, and cilantro in a bowl.
  • Gently toss and season with salt. Chill until ready to use.
  • Pat salmon dry and rub with olive oil.
  • Mix all blackening spices and coat both sides of the salmon.
  • Heat a cast-iron skillet or nonstick pan over medium-high heat.
  • Cook salmon 3–4 minutes per side until blackened and cooked through.
  • Remove from heat and flake into large chunks.
  • Warm tortillas in a dry skillet or microwave.
  • Place salmon in tortillas, top with mango avocado salsa and optional toppings.
  • Serve immediately, with lime wedges on the side.
