Savory, hearty, and full of Mediterranean flavor, Italian Breakfast Strata is a make-ahead casserole layered with crusty bread, eggs, cheese, and classic Italian ingredients. Perfect for brunch, holidays, or feeding a crowd, it bakes up golden and satisfying.

Origin Italian Breakfast Strata

Strata is an American breakfast classic inspired by Italian frittatas and bread puddings. This version adds Italian sausage, sun-dried tomatoes, and fresh basil for a Tuscan twist.

What I Love About This Recipe

You assemble it the night before, so all you have to do is bake in the morning. The layers soak up the eggs and cheese, creating a custardy center and a crispy top.

Ingredients

  • 1 lb Italian sausage, casing removed

  • 1 loaf crusty Italian bread, cut into 1-inch cubes (about 8 cups)

  • 2 cups shredded mozzarella cheese

  • ½ cup grated Parmesan cheese

  • 1 cup chopped sun-dried tomatoes (oil-packed, drained)

  • 1 small onion, diced

  • 2 cloves garlic, minced

  • 2½ cups whole milk

  • 8 large eggs

  • 1 teaspoon salt

  • ½ teaspoon black pepper

  • ¼ cup chopped fresh basil

Directions

  • In a skillet over medium heat, cook sausage until browned, breaking it up as it cooks. Drain excess fat.
  • Add onion and garlic; cook 2–3 minutes until softened. Remove from heat.
  • Grease a 9×13-inch baking dish.
  • Spread half the bread cubes in the dish. Top with half the sausage mixture, half the sun-dried tomatoes, and half the cheeses.
  • Repeat layers with remaining bread, sausage mixture, tomatoes, and cheeses.
  • In a large bowl, whisk together eggs, milk, salt, and pepper. Pour evenly over the casserole.
  • Cover tightly with foil and refrigerate at least 4 hours or overnight.
  • When ready to bake, preheat oven to 350°F (175°C).
  • Bake covered for 30 minutes. Remove foil and bake another 20–25 minutes, until golden and set in the center.
  • Cool slightly before serving. Sprinkle with fresh basil.

Notes

  • For extra flavor, use fresh mozzarella or provolone.
  • You can swap sausage for cooked pancetta, bacon, or leave it out for a vegetarian version.
  • Leftovers reheat well and can be frozen in portions.

Ingredients

  • 8 slices of bread (any type, cubed)

  • 1 lb breakfast sausage (crumbled)

  • 1 medium onion, diced

  • 2 cups shredded cheese (cheddar or a mix)

  • 8 large eggs

  • 2 cups milk (any kind)

  • 1 teaspoon salt

  • ½ teaspoon black pepper

  • 1 teaspoon garlic powder

  • 1 teaspoon mustard powder (optional)

  • 1 tablespoon butter (for greasing the baking dish)

  • Fresh herbs for garnish (optional, such as parsley or chives)

Directions

  • Grease a 9×13-inch baking dish with butter.
  • Layer the cubed bread in the dish.
  • In a skillet, cook the breakfast sausage over medium heat until browned, breaking it into small pieces as it cooks. Add the diced onion and cook until softened.
  • Sprinkle the cooked sausage and onion mixture evenly over the bread cubes, then top with shredded cheese.
  • In a large bowl, whisk together the eggs, milk, salt, pepper, garlic powder, and mustard powder (if using).
  • Pour the egg mixture evenly over the bread, sausage, and cheese. Press down gently with a spoon to ensure the bread absorbs the liquid.
  • Cover the casserole with plastic wrap or aluminum foil and refrigerate overnight.
  • The next morning, preheat the oven to 350°F (175°C).
  • Remove the plastic wrap or foil from the casserole and bake for 45-50 minutes, or until the casserole is golden brown and set in the center.
  • If the top is browning too quickly, cover the casserole loosely with foil and continue baking.
  • Let the casserole cool for a few minutes before cutting it into squares. Garnish with fresh herbs if desired. Serve hot, with a side of fruit or a dollop of sour cream if you like.

Notes

  • You can customize the casserole by adding vegetables like spinach, bell peppers, or mushrooms.
  • If you prefer a vegetarian version, you can substitute the sausage with sautéed vegetables or plant-based breakfast meat.
  • To make the casserole even richer, add some cream instead of milk.
  • This casserole can be stored in the fridge for up to 3 days and reheated easily.
