  • 8 oz cream cheese, softened

  • ¼ cup granulated sugar

  • ½ tsp vanilla extract

  • 1 cup unsalted butter, softened

  • 1 ½ cups granulated sugar

  • 2 large eggs

  • 2 ¾ cups all-purpose flour

  • 2 tsp cream of tartar

  • 1 tsp baking soda

  • ½ tsp salt

  • 1 tsp ground cinnamon

  • ¼ cup granulated sugar

  • 1 tsp ground cinnamon

Directions

  • In a bowl, mix cream cheese, sugar, and vanilla until smooth. Scoop small spoonfuls onto a baking sheet lined with parchment and freeze for 30–45 minutes.
  • Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  • In a large bowl, cream butter and sugar until light and fluffy. Beat in eggs one at a time.
  • In a separate bowl, whisk together flour, cream of tartar, baking soda, salt, and cinnamon.
  • Gradually add dry ingredients to the wet mixture until a dough forms.
  • Mix sugar and cinnamon for rolling in a small bowl.
  • Scoop out a portion of dough, flatten it, and place a frozen cheesecake ball in the center. Wrap dough around it to seal.
  • Roll the stuffed ball in cinnamon sugar, then place on prepared baking sheet.
  • Bake for 10–12 minutes, or until edges are set and tops begin to crack. Cool slightly before serving.

Ingredients

  • 1 ½ cups graham cracker crumbs

  • ¼ cup granulated sugar

  • 6 tbsp melted butter

  • 16 oz (2 blocks) cream cheese, softened

  • ½ cup granulated sugar

  • 2 large eggs

  • 1 tsp vanilla extract

  • ¼ cup sour cream

Directions

  • Preheat oven to 325°F (160°C). Line an 8×8 or 9×9-inch baking pan with parchment paper.
  • In a bowl, combine graham cracker crumbs, sugar, and melted butter. Press mixture firmly into the bottom of the prepared pan to form the crust.
  • In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, then mix in vanilla and sour cream.
  • Pour the cheesecake mixture over the crust and smooth the top.
  • Bake for 30–35 minutes, or until the center is just set.
  • Allow to cool completely, then chill in the refrigerator for at least 2 hours (preferably overnight).
