Ingredients

  • 6 large eggs

  • 3 tbsp mayonnaise

  • 1–2 tsp chipotle peppers in adobo sauce, finely chopped (adjust to heat preference)

  • 1 tsp Dijon mustard

  • Salt and black pepper, to taste

  • 2–3 slices cooked bacon, crumbled

  • Optional: smoked paprika and chopped chives for garnish

Directions

  • Hard boil the eggs: Place in a pot, cover with water, bring to a boil, then simmer for 9–10 minutes. Transfer to ice water to cool.
  • Peel eggs and slice in half lengthwise. Remove yolks and place in a bowl.
  • Mash yolks with mayo, chipotle, mustard, salt, and pepper until smooth.
  • Spoon or pipe the mixture back into the egg whites.
  • Top with crumbled bacon, and sprinkle with smoked paprika and chives if using.
  • Serve chilled or at room temperature.

Notes

  • For smoother filling, use a food processor to blend the yolk mixture.
  • You can prepare the eggs a day ahead; just store the whites and filling separately until ready to serve.
  • Not into bacon? Try crispy shallots or smoked almonds for a crunch alternative.
