Ingredients

  • 1 cup assorted vegetables (e.g., broccoli florets, bell peppers, zucchini slices, carrot sticks, green beans)

  • ½ cup all-purpose flour

  • ½ cup cold sparkling water

  • 1 large egg

  • ¼ tsp salt

  • Cooking spray or a light brush of oil

Directions

  • Preheat the air fryer to 400°F (200°C) for 5 minutes.
  • In a bowl, whisk the egg and cold sparkling water together. Gradually add flour and salt, mixing lightly — batter should be lumpy and not overmixed.
  • Dip each vegetable piece into the batter, allowing excess to drip off.
  • Lightly spray or brush the air fryer basket with oil. Place battered vegetables in a single layer (do not overcrowd).
  • Air fry for 8–10 minutes, turning halfway, until golden and crispy.
