  • 1 tsp thyme

  • Salt and pepper to taste

  • Optional: lime juice and chopped cilantro for garnish

Directions

  • Rub chicken pieces with recado rojo and a bit of oil until coated.
  • In a large pot, heat oil and brown the chicken on all sides.
  • Add onion, bell pepper, garlic, and tomato; cook until softened.

  • 4 cloves garlic (minced)

  • 3 cups beef broth or water

  • 2 tablespoons olive oil

  • 1 teaspoon dried thyme

  • 1 teaspoon rosemary

  • Salt and pepper to taste

  • 1 bay leaf

  • Optional: 1 cup of peas or beans for added texture

Directions

  • Heat olive oil in a large pot over medium heat.
  • Add the meat and brown it on all sides, about 5–7 minutes.
  • Remove the meat and set it aside.
  • In the same pot, add the onions and garlic and sauté until softened, about 3 minutes.
