Ingredients

1 bone-in or boneless ham (about 5–6 lbs)
2 tbsp olive oil
2 tbsp brown sugar
1 tbsp smoked paprika
1 tsp garlic powder
1 tsp onion powder
1 tsp ground mustard
1 tsp ground black pepper
½ tsp salt
1 cup barbecue sauce
¼ cup apple cider vinegar
2 tbsp honey
1 tbsp Dijon mustard

Directions

Preheat oven to 300°F (150°C). Line a roasting pan with aluminum foil.
In a small bowl, mix together olive oil, brown sugar, paprika, garlic powder, onion powder, mustard, pepper, and salt. Rub the mixture all over the ham.
Place the ham in the prepared roasting pan and cover loosely with foil.
Bake for 3–4 hours, basting every 45 minutes with its own juices.
Once the ham reaches an internal temperature of 190°F (88°C) and is fork-tender, remove from the oven and let it rest for 15 minutes.
While the ham rests, prepare the sauce by mixing barbecue sauce, apple cider vinegar, honey, and Dijon mustard in a saucepan. Bring to a simmer and cook for 5–10 minutes, stirring occasionally.
Shred the ham using two forks, pulling it apart into bite-sized pieces.
Drizzle the sauce over the shredded ham, and toss to coat.
Serve on buns, in tacos, or with your favorite sides.

Notes

If you prefer a sweeter sauce, add more honey or brown sugar to taste.
This pulled ham also works great for meal prep and can be stored in the fridge for up to 5 days.
For a smoky flavor, add a few drops of liquid smoke to the sauce.
