Ingredients

  • 1 tbsp oil or butter

  • 1 small onion, finely chopped

  • 2 cloves garlic, minced

  • 1 tbsp ginger, grated (optional but recommended)

  • 2 tbsp curry powder (mild or hot)

  • 1 tsp ground cumin

  • ½ tsp turmeric

  • ¼ tsp chili powder (optional for heat)

  • 1 tbsp tomato paste

  • 1 cup coconut milk or heavy cream

  • ½ cup vegetable or chicken broth

  • Salt, to taste

  • Fresh cilantro, for garnish (optional)

Directions

  • Heat oil in a saucepan over medium heat. Add onion and sauté until soft and golden, about 5 minutes.
  • Stir in garlic and ginger; cook for 1 minute until fragrant.
  • Add curry powder, cumin, turmeric, and chili powder. Stir for 30 seconds to toast the spices.
  • Mix in tomato paste and cook for another minute.
  • Pour in coconut milk and broth. Stir well and bring to a gentle simmer.
  • Simmer for 10–15 minutes until slightly thickened. Season with salt to taste.
  • Blend with an immersion blender for a smoother texture, if desired.
  • Garnish with fresh cilantro and serve hot.

Notes

  • Make it creamier with extra coconut milk, or tangier with a splash of lemon juice.
  • For a thicker sauce, simmer longer or stir in 1 tsp cornstarch dissolved in water.
  • Use as a base for curries with chicken, chickpeas, lentils, or vegetables.
