1 tablespoon soy sauce
1 teaspoon rice vinegar
1 ripe avocado, sliced
1 cup sushi rice, cooked and cooled
1 tablespoon sesame oil
¼ cup mayonnaise
1 tablespoon sriracha sauce (optional, for extra spice)
1/4 cup cucumber, julienned
2 teaspoons black sesame seeds (for garnish)
2 teaspoons chopped green onions (for garnish)

Directions

In a small bowl, mix together the wasabi paste, soy sauce, rice vinegar, and mayonnaise. Adjust wasabi to taste, adding more if you prefer extra heat.
Toss the shrimp in the wasabi mixture and let it marinate for 10 minutes.
Meanwhile, heat sesame oil in a pan over medium heat. Add the cooked sushi rice and sauté for 2-3 minutes, until it’s lightly golden and crispy.
