Ingredients

  • 2 medium potatoes, boiled and mashed

  • ½ cup green peas (boiled or frozen)

  • 1 small onion, finely chopped

  • 1 green chili, minced (optional)

  • 1 tsp ginger, grated

  • 1 tsp cumin seeds

  • ½ tsp turmeric

  • 1 tsp garam masala

  • 1 tsp coriander powder

  • Salt, to taste

  • 1 tbsp oil

  • Fresh coriander, chopped

Directions

  • Heat oil in a pan. Add cumin seeds and let them sizzle.
  • Add onion, green chili, and ginger. Sauté until soft.
  • Mix in turmeric, coriander powder, garam masala, and salt.
  • Add mashed potatoes and peas. Stir well.
  • Cook for 2–3 minutes, then stir in fresh coriander. Let cool.
  • Take one wrapper and form a cone. Fill with 1–2 tbsp of potato mixture.
  • Seal the edges with flour paste. Repeat with remaining filling.
  • Preheat the air fryer to 375°F (190°C).
  • Lightly brush or spray samosas with oil.
  • Place in the air fryer basket in a single layer.
  • Cook for 10–12 minutes, flipping halfway, until golden and crisp.

Notes

  • You can use puff pastry or phyllo dough for a flakier texture.
  • Add paneer or minced meat for a protein boost.
  • Serve with mint chutney, tamarind sauce, or ketchup.
