  • 1 cup cherry tomatoes, halved

  • ½ cup Kalamata olives, pitted and halved

  • ¼ cup red onion, thinly sliced

  • 3 garlic cloves, minced

  • 2 tbsp olive oil

  • 1 tbsp lemon juice

  • 1 tsp dried oregano

  • Salt and black pepper, to taste

  • Fresh parsley, chopped (for garnish)

  • Lemon wedges, for serving

Directions

  • Preheat oven to 400°F (200°C). Lightly grease a baking dish.
  • Place cod fillets in the dish and season with salt, pepper, and lemon juice.
  • In a bowl, combine tomatoes, olives, onion, garlic, olive oil, and oregano. Toss well.
  • Spoon the tomato mixture evenly over and around the fish.
  • Bake for 15–18 minutes, or until the cod flakes easily with a fork.
  • Garnish with fresh parsley and serve with lemon wedges.
