  • 6 Tbsp. vegetable oil, divided

  • 2 bell peppers, thinly sliced

  • 1/2 onion, thinly sliced

  • Kosher salt

  • 1 lb. boneless skinless chicken breasts, sliced into strips

  • 1/2 tsp. chili powder

  • 1/2 tsp. ground cumin

  • 1/2 tsp. dried oregano

  • 4 medium flour tortillas

  • 2 c. shredded Monterey jack

  • 2 c. shredded cheddar

  • 1 ripe avocado, sliced

  • 2 scallions, thinly sliced

  • Sour cream, for serving

Directions

  • In a large skillet over medium-high heat, heat 1 tablespoon neutral oil. Season peppers and onion with salt. Cook 5 minutes, or until soft. Transfer to a plate.
  • Heat 1 tablespoon of neutral oil in a pan over medium-high heat. Season chicken with chili powder, cumin, dried oregano, and 1/2 teaspoon salt. Cook, stirring occasionally, until golden and thoroughly cooked, about 8 minutes. Transfer to a plate. Wipe out the skillet.
  • In a skillet, add 1 tablespoon of neutral. Top half of a flour tortilla with cheese, cooked chicken, pepperonion mixture, avocado slices, and scallions. Cook the other half of the tortilla, flipping once, until golden, about 3 minutes per side.
  • Repeat with the remaining oil, tortillas, chicken, pepper-onion mixture, avocado, and scallions to make four quesadillas.
  • Cut into wedges and serve with sour cream.

Notes

  • Quesadillas can be made with any cheese, but cheddar, Monterey Jack, or a Mexican blend are the best options. A combination of cheeses enhances flavor.

This chicken taco chili is one of my go-to meals. It’s perfect served in a bowl with multigrain chips, and you can top it with some reduced-fat cheddar cheese or avocado. It makes a big batch, and honestly, it tastes even better the next day for lunch. If you prefer a pressure cooker, you can try the Instant Pot version of this recipe. It’s also great for freezing!

How To Freeze Crock Pot Chicken Taco Chili

Crock Pot Chicken Taco Chili is a simple slow cooker recipe that uses ingredients you probably already have in your freezer and pantry. It’s been a favorite recipe of mine since 2008!

Ingredients

  • 1 small onion, chopped

  • 15.5 oz can black beans, drained

  • 15.5 oz can kidney beans, drained

  • 8 ounce can tomato sauce

  • 10 oz package frozen corn kernels

  • 2 cans diced tomatoes w/chilies, 10 ounces each

  • 4 oz can chopped green chili peppers, chopped

  • 1 packet reduced sodium taco seasoning or homemade, see below

  • 1 tbsp cumin

  • 1 tbsp chili powder

  • 24 oz 3 boneless skinless chicken breasts

  • 1/4 cup chopped fresh cilantro

  • To make your own taco seasoning, omit the packet, cumin and chili powder above and use below instead:

  • 1 1/2 tablespoons cumin

  • 1 1/2 tablespoons chili powder

  • 1/4 teaspoon garlic powder

  • 1/4 teaspoon onion powder

  • 1/4 teaspoon dried oregano

  • 1/2 teaspoon paprika

  • 1 teaspoon kosher salt

  • 1/2 teaspoon black pepper

Directions

  • Combine beans, onion, chili peppers, corn, tomato sauce, diced tomato, cumin, chili powder and taco seasoning in a slow cooker and mix well.
  • Nestle the chicken in to completely cover and cook on LOW for 8 to 10 hours or on HIGH for 3 to 4 hours.
  • Half hour before serving, remove chicken and shred.
  • Return chicken to slow cooker and stir in.
  • Top with fresh cilantro and your favorite toppings!

Notes

  • For the best flavor, make sure to drain and rinse your beans before adding them to the slow cooker. Also, feel free to adjust the spice level to suit your taste. This recipe is very versatile, so you can easily customize it by adding extra veggies or toppings like sour cream, jalapeños, or cilantro!

  • Meat Directions.
  • Combine all the ingredients, leaving the meat aside.
  • Thoroughly stir the spice mixture to ensure all the spices are evenly blended.
  • Break apart the ground beef and cook it until browned, stirring frequently.
  • Remove from heat, rinse the beef with hot water, and drain off the excess water and grease.
  • Place the beef back into the pan and stir in the spice mixture.
  • Pour 3/4 to 1 cup of water into the pan with the ground beef and seasoning, then simmer over medium-low heat for 20 minutes.
  • Cook on low heat until most of the moisture has evaporated.
  • Remove from heat when the moisture in the meat has evaporated, but the meat is still moist.
  • Assemble the taco.
  • To refresh the taco shells, place them in a baking dish and heat in a 350-degree oven for 7-10 minutes.
  • To assemble the tacos, add a couple of tablespoons of ground meat, followed by lettuce, cheese, tomatoes, and sour cream if desired.
