  • 2 cups all-purpose flour

  • 1 tbsp baking powder

  • ½ tsp baking soda

  • 1 tsp salt

  • ½ cup cold butter, cubed

  • 1 cup shredded sharp cheddar cheese

  • ¾ cup cold buttermilk

  • 4 slices cooked bacon

  • 4 breakfast sausage patties

  • 4 slices cooked ham

  • 4 large eggs

  • 4 slices cheddar or American cheese (optional)

  • Butter or oil, for cooking eggs

Directions

  • Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  • In a large bowl, whisk together flour, baking powder, baking soda, and salt. Cut in cold butter using a pastry cutter or fingertips until the mixture resembles coarse crumbs. Stir in shredded cheddar cheese.
  • Pour in cold buttermilk and mix gently until dough comes together. Turn onto a floured surface and pat into a 1-inch thick rectangle. Fold once or twice, then pat again. Cut into 4 large biscuits.
  • Place biscuits on the baking sheet and bake for 15–18 minutes, until golden brown. Let cool slightly.
  • While biscuits bake, cook bacon, sausage, and ham as desired. Set aside.
  • Heat a skillet over medium heat and lightly grease. Crack eggs one at a time and cook to your liking (fried, over easy, or scrambled).
  • Slice warm biscuits in half. Layer each bottom half with sausage, ham, bacon, cooked egg, and cheese slice (if using). Top with the biscuit lid.
