Ingredients

  • 1 cup all-purpose flour

  • 1 tbsp sugar

  • 1 tsp baking powder

  • ½ tsp baking soda

  • ¼ tsp salt

  • 1 cup buttermilk (or milk + 1 tsp vinegar)

  • 1 egg

  • 2 tbsp melted butter or oil

  • 6–8 strips cooked bacon

Directions

  • In a bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  • In another bowl, mix buttermilk, egg, and melted butter. Add wet to dry and stir until just combined.
  • Heat a nonstick skillet or griddle over medium heat and lightly grease.
  • Pour batter into rounds. Lay a strip of cooked bacon across each pancake while the batter is still wet.
  • Flip when bubbles form and edges are set. Cook until golden on both sides.
  • Serve warm with maple syrup or a pat of butter.

Notes

  • Cook bacon until crisp for best texture.
  • You can cut bacon into halves to fit smaller pancakes.
