1/4 cup cucumber, julienned
2 teaspoons black sesame seeds (for garnish)
2 teaspoons chopped green onions (for garnish)
Directions
- In a small bowl, mix together the wasabi paste, soy sauce, rice vinegar, and mayonnaise. Adjust wasabi to taste, adding more if you prefer extra heat.
- Toss the shrimp in the wasabi mixture and let it marinate for 10 minutes.
- Meanwhile, heat sesame oil in a pan over medium heat. Add the cooked sushi rice and sauté for 2-3 minutes, until it’s lightly golden and crispy.
- To assemble: Spoon a small amount of crispy rice into each muffin tin cup (if using a muffin tin) or small serving cups. Press gently to form a cup shape.
- Top with slices of avocado, wasabi shrimp, julienned cucumber, and a drizzle of sriracha if desired.
- Garnish with black sesame seeds and chopped green onions.
Notes
- For a more traditional sushi flavor, add a small slice of nori (seaweed) inside the rice cups.
